Who doesn’t love a good pasta salad? I have vivid memories from my childhood summers of playing outside all day then coming in for dinner and having a big, cold bowl of pasta salad sitting on the table. Well, now as an adult I am bringing my lunch to work and rather than bringing a bag of chips or some other delicious non-healthy side I have been making this mouthwatering Italian Supergrain Garden Pasta Salad.
As you can see this Italian Supergrain Garden Pasta Salad is full of fresh vegetables but I have a secret, see that pasta? It is actually Ancient Harvest Organic Quinoa Pasta! BOOM, secret revealed! Y’all, I am OBSESSED with this gluten-free tri-color corn-quinoa pasta. When cooked correctly it tastes EXACTLY like traditional pasta.
I have always been a sucker for curly pasta, I like to think it gets better coverage of the sauce (or in this case dressing) because the sauce has nooks and crannies to hide on the pasta! And yes, I have put this much thought into my pasta basically ever since I can remember. Can we all also agree that the folded tortilla chips are the best to with with salsa and queso? I have digressed… sorry.
I have been experimenting this recipe with different Italian salad dressings and I have come to the conclusion that Briannas Italian Vinaigrette is the best dressing for the job. I should add now that I am not getting paid to say this either. I received a bottle of Briannas Italian Vinaigrette in a Degustabox that I recently reviewed. Normally I probably wouldn’t have ever picked up a Briannas dressing because the bottle looks so fancy but this bottle of dressing is less than $3!
If you’re going to go to the extent of making this delicious Italian Supergrain Garden Pasta Salad then I definitely suggest this dressing. Be good to your body, it will thank you!
Italian Supergrain Garden Pasta Salad
Feeds: 5-6 servings | Prep Time: 20 minutes | Cook Time: 10 minutes | Total Time: 30 minutes
- 1 green bell pepper (chopped)
- 1 cup red onion (chopped)
- 1 (2 oz) can finely chopped black olives
- 3-4 cups broccoli florets
- 1 cup cherry tomatoes (cubed)
- 1.5 cups Colby Jack cheese (cubed)
- 1 (8 oz) box Gluten-Free Supergrain Garden Pagodas Pasta
- 1.5 cups Briannas Italian Vinaigrette Dressing
Cook Gluten-Free Supergrain Garden Pagodas Pasta according to package directions.
While the pasta is cooking combine all of the ingredients in a large bowl EXCEPT for the Briannas Italian Vinaigrette Dressing.
Once the Gluten-Free Supergrain Garden Pagodas Pasta has completely cooled down add the pasta and the Briannas Italian Vinaigrette to your bowl of ingredients. Stir until everything is completely coated.
Refrigerate for at least 20 minutes before serving.
Serve and enjoy!
