We all have those dishes that we make often enough that they don’t really have a recipe and you certainly cannot remember the origin. This is that recipe for me. I know that I stole this dish from my sister because every time I make it I say “I making my sister’s Chicken Caesar Salad for dinner tonight” but where the origin goes beyond that I am clueless.
R and I make this salad at least once a week for a variety of reasons: it is simple, contains very few ingredients, it makes us feel healthy after we eat it but above all else IT IS DELICIOUS!
I have cooked this Not So Traditional Chicken Caesar Salad for my in-laws as a side dish but R and I mostly eat this salad as our dinner. I like bringing our big wooden salad bowl to the table for easy access to guilt-free seconds (and sometimes thirds!)
I also must add that this recipe depends highly on the perfect dressing. I have tried others but I always come back to Marie’s Caesar Salad Dressing. This dressing has the right amount of tang which pairs superbly with the bite of red onion and the buttery-ness of avocado.
Not So Traditional Chicken Caesar Salad
Feeds: 4-5 servings| Prep Time: 5 minutes | Cook Time: 20 minutes | Total Time: 25 minutes
- 1 bag hearts of romaine lettuce
- 1/4 cup red onion (chopped)
- 4 strips bacon
- 1/2 cup shredded Parmesan cheese
- 3 medium avocados (cubed)
- 2 large chicken breast
- 1/2 bag Cheese & Garlic Flavor Texas Toast Croutons
- Marie’s Caesar Salad Dressing
- salt & pepper to taste
- Juice from 1 lime (optional)
Cook the bacon in a nonstick grill pan over medium heat, low and slow. Once the bacon is fully cooked remove the bacon from the pan, place the bacon on a bed of paper towels, set aside to cool. Do not empty out the bacon grease! When the bacon is cooled off chop it into bits.
Season the chicken with salt and pepper to taste then begin cooking the chicken breast in the same nonstick grill pan where the bacon was cooked. Once the chicken is fully cooked set it aside to cool then cut the chicken into bite size cubes.
In a large salad bowl add the entire bag of hearts of romaine lettuce, chopped red onion, bacon bits, shredded Parmesan cheese, Cheese & Garlic Flavor Texas Toast Croutons and 3 TBSP of the Marie’s Caesar Salad Dressing. Toss everything until well combined and the dressing is coating all of the lettuce. (At this point you may begin adding more Marie’s Caesar Salad Dressing to taste if needed.)
To prevent the avocados from turning into mush, the avocado cubes should be added once all of the lettuce is coated in dressing. Give your salad one last, gentle toss and add lime juice if desired.
Serve and enjoy!
